Sandy’s Cinnamon Rolls 

Prepares 12 rolls in 2 days

First Day Directions for Dough

Ingredients: 1 ½ cup of milk, ¼ shortening, 2 eggs, ½ cup of sugar, ½ cup potato flakes, 1 tsp vanilla, ½ cup of warm water, 2 tsp of yeast, 1 tsp of sugar, 4 cups flour, 1 tsp salt, 1 ½ sticks of butter.

  1. Heat the milk and shortening to 140 degrees.
  2. In a bowl, add the eggs, ½ cup sugar, potato flakes and vanilla.
  3. In another bowl, add the warm water, yeast and 1 tablespoon of sugar.
  4. Add egg mixture and yeast mixture to milk and mix in a mixer.
  5. After the mixture is fully mixed, change the paddle on the mixer and replace with a dough hook.
  6. Add 2 cups of the flour and 1 tablespoon of salt. Gradually add the remaining flour until the dough is not sticky but still tacky. Let rise covered with plastic wrap until dough doubles in size.
  7. Roll out the dough to the size and shape of a baking sheet. Cover the dough with 1 and ½ sticks of very soft butter.
  8. Mix separately 3 teaspoons of cinnamon and 1 cup of brown sugar and then cover the buttered dough.
  9. Roll the dough tightly and cut in 2-inch pieces (total of 12). Place the cut rolls on a sprayed cooking sheet, cover and let sit in a refrigerator overnight for the rise to double in size.

Second Day

  1. Bake the cinnamon rolls for approximately 20 minutes at 350 degrees in a preheated oven.

While that bakes, prepare the glaze using a whisk to mix.

Ingredients for glaze: ¾ cup of powdered sugar, 3/8 cup of milk, and ½ tsp vanilla.

Ingredients for frosting: 4 oz cream cheese, 1 stick softened butter, 2 cup powdered sugar, 1 tsp vanilla.

  1. Directions: Pour glaze over hot cinnamon rolls concentrating on pouring down between the sheets of dough. Let it cool.
  2. Make the frosting by whipping the ingredients in a mixer and frost.
  3. Enjoy your cinnamon rolls!

Berry Shortbread Dreams

Makes about 3-1/2 dozen in 1 day

Ingredients: 1 cup butter softened, 2/3 cup of sugar, ½ tsp almond extract, 2 cups of flour, 1/3 to 1 1/2 cup seedless raspberry jam.

Ingredients for Glaze: 1 cup confectioners’ sugar, 2 to 3 tsp water, ½ tsp almond extract.

  1. In a mixing bowl, cream the butter and sugar. Beat in extract, and gradually add flour until dough forms a ball.
  2. Cover and refrigerate for 1 hour or until the dough is easy to handle.
  3. Roll into 1 inch balls then place the balls 1 inch apart on ungreased baking sheets. Use end of a wooden spoon handle to make an indention in the center.
  4. Fill the center with jam.
  5. Bake at 350 for 14-18 minutes or until edges are lightly browned.
  6. Remove the baked cookies to wire racks to cool down.
  7. Spoon additional jam into cookies if desired. Combine glaze ingredients and drizzle over cookies.
